It seems like once upon a time homes were built solely of wood and by hand. These cabin homes were lit by candles and in the corner was a big cast iron stove that warmed every inch of the house. The world came a long way from the days of the struggles of harsh winters and cutting wood to fire up their stoves. Wood fired ovens are replaced with the conventional ovens and electric or gas powered stoves. Many times you would see wood fired ovens in pizzerias or in backyards of some homes. With convenience comes with lost benefits the wood fired oven had in the kitchen.

When many of us think of wood fired ovens, we think of the prairies of the American west where wood cabin homes had a cast iron stove with freshly cut wood stacked against the wall. Wood fired ovens have a long history and many different versions of them. From the prairies of America to the countryside of Italy, the wood fired ovens were around during the ancient times. The ovens were created from cast iron or bricks of stone, each different but all for the same purpose, to cook food. People can still find these wonderful ovens in homes on the countryside of Europe still using the ancient Roman designs.

Many people do not realize the benefits of wood fired ovens. These wood fired ovens can create high heat, heat that can reach anywhere from 500 to 700 degrees. The high heat allows foods such as vegetables to cook quickly, retaining the nutrients and antioxidants. As for the modern conventional ovens foods take longer to cook resulting in lost nutrients and antioxidants. Another benefit the wood fired ovens have is how it enhances the flavor of the food cooked. From the wood burning, the smoke brings the extra flavor that enhances the food. Many BBQ restaurants and pizzerias still use the wood fired ovens for the benefits to enhance the flavors of their meats and food.

With the many benefits from cook stove cooking, people can use different types of wood to enhance different types of meat. From hickory to cherry wood, each wood goes perfectly to enhance the flavor of fish, beef, pork, and chicken. Wrapping the meat and vegetables in aluminum you can cook the food while the smoke seeps into the aluminum letting the flavors to ramp up. Comparing the modern stoves with the wood fired ovens, you can tell the difference in the flavors.

Wood fired ovens are expensive to install and create, but people are recognizing the benefits. Unlike the times of the prairies or the ancient Rome, the wood fired ovens are not found inside of homes but rather outside, creating an outdoor kitchen. As expensive it can become to install a wood fired oven outside it would also become cost effiecent on utlity bills and a great area to have fun gatherings with family and friends. You will now find modern homes with the modern version of the wood stove ovens. To have a wood fired oven is highly recommended as families look to cook and eat at home.Mary Cottrellhttp://www.blogger.com/profile/16464194982922626212noreply@blogger.comtag:blogger.com,1999:blog-2513910239257481220.post-24614530262274171172014-10-01T05:58:00.001-07:002014-10-01T05:58:52.247-07:00The art of cook stove cooking for a clean and efficient energy.Whether you are in the city or off the grid you can enjoy gourmet food with the help of a wood cook stove! From stews to muffins a cook stove delivers a tasty, engaging, and personal cooking experience.

You own that heat! Light a real fire in the firebox, wait for the baking oven and cook top to heat up, place your food in or on the stove and you are in business, welcome to cook stove cooking! You can make anything that can be done in a gas or electric stove... during a power outage!

Some helpful tips:

The side of the baking oven next to the firebox is almost always higher than the other side. Therefore turn your tray if you are baking bread - this will provide a more even finish to all your loaves. Use stoves with cast iron cook tops only.

Cast iron is slower to heat up than steel but it heats up evenly and provides a uniformly hot surface.

Steel, on the other hand, heats up quickly and looses heat quickly, the part of your cook top closer to the firebox may be noticeably hotter than the other side and the temperature can fluctuate over time, and a non-uniform heat results in non-uniformly cooked food.

Don't be afraid to take out those cast iron rings from the burner if your stove comes with them. Your cooking pot will then be directly over fire for a very quick camp-like Dutch style cooking.

Although some will escape smoke will not fill your room if your stove is properly ventilated - the chimney created draft claims the major portion of it even during the few moments when the rings are out but the pot is not on yet. Use a special fire-rated pot, ideally cast iron.

Enameled pots can get ruined over open fire. Have baking mitts handy at all times, everything about a cook stove is hot. Open the baking oven door oven as little as possible to maintain consistent temperature.

Cook stoves are not for the faint of heart but let it suffice to say that those who cook on wood use same stoves for decades. Enjoy!Mary Cottrellhttp://www.blogger.com/profile/16464194982922626212noreply@blogger.comtag:blogger.com,1999:blog-2513910239257481220.post-24381059297780011812014-07-03T07:18:00.000-07:002014-07-03T07:18:01.017-07:00The unique flavours of South African foodTake delight in the exciting selection of delicious food throughout South Africa, from the delightfully unique flavours of South Africa's rainbow food to extraordinary culinary specialties from across the globe.

One may actually claim that the diverse food combinations with its exotic elements have made South African food what it is today.

The South African-Malay Combo

The Dutch food preparation custom and style in the very early days of South Africa were transformed permanently with the arrival of slaves to the Cape colony from the Far East. Malay servants came to the Cape at the end of the 17th century. Amongst the men were experienced anglers and fishermen, and the females were skilled cooks that added a wide variety of flavours and spices to the dishes they prepared for their masters at the time.

They introduced spices and flavours like star fennel, aniseed, turmeric extract, cardamom, ginger and list of other spices that was not freely available in the Cape colony at that time.

Malayan cooks introduced an assortment of massalas, combinations and blends of various flavours which they used making various food types. The slaves even brought along saltpetre which was a wonder substance if you wanted to pickle something like fish or meat. These herbs were very common in the Indonesian cooking culture.

The intermixing and intermingling of the very early Dutch and Malay cookery is recognized today as the so called "Cape Dutch food or cuisine”, an aromatic style of food preparation which is very distinct to South Africa.

The Portuguese and South African combination

Due to the closeness of previous Portuguese colonies of Angola and Mozambique next to the Republic of South Africa, Portuguese food had a significant effect on South African cuisine and cooking style, primarily with the use of spicy hot chilli-based peri-peri spices along with onions, garlic, fresh coriander, bay leaves, paprika and delicious sweet peppers. All of these spices goes exceptionally well with a traditional South
African "braai" (barbecues). Barbequed-Smoked peri-peri chicken and a
traditional braai has ended up as a national past time.
Spectacular Fish Braai

From the Namibian border on the west side to the Mozambique boundary on the east side, South Africa’s shoreline is abundant in various fish and shellfish such as snoek also known as sea pike, kingklip, deep sea hake, red roman and pilchards to name just a few. Various other special shellfish from the sea include abalone, mussels, oysters, shrimps and a spiny rock lobster crayfish called "kreef" in South Africa. The "braai" or barbeque for our UK and US readers is the preferred way of preparing a fish.

South Africa men and women on the western coastline are known for their love and fondness for crayfish and traditional snoek. They are normally particularly skilled at barbecuing fish over an open fire which is called a "braai". In seaside locations fresh line fish has always been known as a good menu choice if you enjoy fish.Mary Cottrellhttp://www.blogger.com/profile/16464194982922626212noreply@blogger.comtag:blogger.com,1999:blog-2513910239257481220.post-79914883563520189872014-04-07T08:07:00.001-07:002014-12-29T09:31:01.964-08:00How To Make Food More AppealingCreating food that people love takes much more skill than simply creating a dish that tastes good. Creating a dish that appeals to the eyes and the sense of smell as well as palate will show that you are a successful cook whether you are cooking professionally or are simply a home cook who likes to entertain family and friends.

A Feast For The Eyes

A plate of food should be a feast for the eyes. The more colorful the dish and the more textural variety it has the more appetizing it will be to those who you serve it too. Whether you are making a simple salad or casserole, an expensive entree or a sweet dessert making sure that the food you serve combines color and textures will encourage people not only to ooh and ahh over your offering, but to actually dig in.

Adding green and red sweet peppers, finely chopped carrots, and bright green herbs to casseroles and soups and add a touch of appealing color while also enhancing the taste of the dish. Try combining blanched broccoli and steamed carrots together as a side for baked chicken or broiled fish to add both a different texture and color will be more exciting that choosing to bland side dishes for bland colored meats. Making use of colorful spices such as paprika, chives, and pepper corn will also brighten up those more boring looking dishes and sides.

Don't forget to use garnishes to make the plate even more attractive. A twist of orange, lemon, or lime on the side of a plate adds a bit of color. Placing that broiled fish on a dark green leaf of kale or that scoop of cottage cheese on a small lettuce leaf makes the food all the more appealing.

The Nose Knows

Along with making your food visually appealing you are also going to want it to be aromatic as well. As most people know the aroma of food, enhances the taste so ensuring that your food has an appetizing aroma will encourage people to want to try the dish. Whether it is the spicy aroma of peppers and garlic, the earthy aroma of dishes prepared using ginger, cumin, cinnamon and cloves or the citrus aroma of lemons, and limes serving food that engages the sense of smell as well as the sense of taste only increases the pleasure for those sampling your food.

Putting It All Together

To really wow those who sample your food, you need to really bring together the sight, smell, and good taste of the food you are serving. Presenting that food in an appealing way and having it served with a smile will definitely increase people's satisfaction. While satisfying those eating any meal is always the goal it is especially important if you make your living from food preparation. Make sure that you arrange the food on the plate in an attractive manner, use proper garnishes, and serve the food at the right temperature.

There may be a number of wine accessories but the craze for aerators is incomparable. Aerators are mainly intended to make the flavor better by speeding up the wine’s contact with Oxygen. Now a question arises? Why should it be done? Well. Oxygen actually softens the consistency and boosts the fruit flavour of a particular wine. The conventional aeration device is the wine decanter, the one with a flashy glass jug which is seen with every expert.

This Wine Aerator Decanter, when a bottle of wine is poured into it, whisks it and helps in getting more molecules of the liquid come in touch with the air. Most of the decanters are seen with a roomy bowl which allows more wine to get in contact with more air. More room means more air available in the bowl to get in contact with the wine.

The aerators are a bit different from the conventional decanters. These aerators have fancy funnels which help you to use only a glass of wine at a time and store the rest of the bottle for later use. This is in a way an advantage as the wine exposed to air, if left for more than a few hours makes it flat and sour. So it is better to expose the required amount of wine only.

Some aerators are designed such that as liquid flows into it, there is a provision to draw air. So, required amount of air is drawn dynamically depending upon the quantity of wine. Such aerators work well with either old wines or younger wines. These actually work the best with red wines which have a characteristic of improving when aerated. This of course can be identified with close observation. If you give aerated and non-aerated wines to beginners you can observe that they would like the aerated ones without knowing which one is what.

You can say that this effect can be obtained by just whirling the wine in the glass. Of course you can as it can be considered as the poor man’s aeration. It is actually similar to whisking cream or beating eggs manually with a spoon, but if you whisk it with a beater you would get an improved result. In a similar manner if you use aerator the effect what you get is quite different from normal swirling. The wine aerator will be different for white wines and red wines to keep the difference of wines intact.

The mechanism will be the same. Anyway the difference in flavors before and after aeration is very minute as we said earlier and can be identified only through close observation. So if you ask the question “are wine aerators really necessary?” then it has to be left to the individual’s interest. If you really find the difference and want to enjoy every sip of your wine then may be it is a right choice. So finally the answer to this question depends on the one who wants to have the best experience of drinking wine.

This is usually done on a contract basis. Though catering provides food and beverages for events it is not similar to event management. Event management is a vast subject in which catering forms a small part.

Those who are very much interested in cooking delicious dishes can opt for catering as their career. Now-a-days people are extremely busy and hence go for caterers for any event they want to organize. So there is a huge demand for caterers who become popular with their quality of food and services.
No matter how big or small your catering business is the profit margin is huge.

There will be usually 66% of pre-tax profits for the caterers but when you consider the overheads this figure becomes reliable. You can lower the overheads to even zero to make your profits dependable. If you decide to start a catering business it is important to know which type of catering you are interested in to make your business successful.
I have to be honest, I don't enjoy cooking all that much. But in order to follow the paleo diet cooking has to be a big part of my life. No more can I run out to my favorite fast food joint and pick up a burger. I have to cook at home. One thing I look for when I am looking for paleo friendly recipes is ease. I don't need anything complicated and I don't need anything that will take forever to prepare.

Chances are you are the same way. And if you are looking for a simple paleo baked salmon recipe you have come to the right place. With this article I am going to share a simple herb crusted salmon recipe with you. Overall it will take you less than 25 minutes to create this recipe. 5 minutes to prep everything and about 15 to 20 minutes to cook it. Simple and fast. Just what I like!

List of ingredients for herb crusted salmon:

2 salmon fillets (6oz each)

1 heaping tablespoon coconut flour

2 tablespoons fresh parsley (or dried, if you have on hand)

1 tablespoon olive oil

1 tablespoon dijon mustard

salt and pepper, to taste

Sounds good already doesn't it? Let's jump in and get
to the nitty gritty. The first thing you need to do is preheat your
oven to 450 degrees. Get a baking sheet and line it with either foil or
parchment. Take the two salmon fillets and place it on the baking sheet.

Grab the olive oil and the dijon mustard and put it
on top of the salmon. Rub it over the top and sides of the salmon. The
next step is to mix the parsley, salt, pepper and coconut flour in a
small mixing bowl. Get a spoon and use it to sprinkle your toppings over
the salmon. You will need to use your hand to pat it down into the
salmon.

Use cooking gloves if you don't want to touch or feel the meet. Once you have covered it with all the toppings you will need to put it in the oven for about 15 minutes. You want to cook it to your desired preference. If you want it medium rare cook it for 12 minutes.

That's basically it. Just sit back and wait for your herb crusted salmon to finish cooking. Now its all about figuring out what sides you want to put with it. I love broccoli and almost always eat it with my salmon. However, you can choose any vegetable you like. Asparagus also goes great with salmon. You can even eat it with a salad if you prefer.

Since this is a paleo recipe be sure to use olive oil on your salad instead of regular dressing. Its healthy for you and has way fewer calories. You can even throw in a sweet potato or some brown rice for your carb source. Whatever you do just make sure its well balanced.
The dedication you put on top of the cake is also one way to make it funny.
For instance, putting these phrases as dedication on top of a birthday cake will bring smile on your lips: “We’re glad you found a new job, because we never really liked you. ” – is for someone who has just been hired in his or her new job. “You’re dead to us now, hope you fail.” – is for someone who just ventured to a new business or just reached another chapter of his or her life.
Whenever you have a corporate function where there will be a lot of people in attendance, the best way to keep everyone’s spirits high and energy flowing is by feeding them and keeping them happy. The best way to do this for large events is by hiring catering companies to take care of all the work for you. Here are some reasons that private function catering is a great idea for your corporate function.

Often times, corporate events can last for many hours and attendees can get very hungry during this time. As they get hungry, their attention may begin to drift or you may even notice a spike in people who ‘use the bathroom’ but really head over to the vending machine to grab a snack or two. If those in attendance know that food is being catered and that they will be fed, they can focus their attention on the event instead, knowing that once business is handled food will be served. Also, the fact that the food will be much better than the options in the vending machine will whet their appetites and add to their excitement.

Because having the attendees fed will make them happy, having food seems like an obvious choice. However planning to cook for dozens, if not hundreds, of people can be nearly impossible on your own. Special events catering companies, such as Brisbane-based Ab Fab Catering, have expertise and knowledge when it comes to planning and preparing for your events with a lot of people. Not only will they offer delicious meals, but they will also plan accordingly for portion sizes and how much to cook for the amount of people in attendance.

It is also important to consider a catering staff considering the fact that they will take care of the little details of your food requirements during your corporate function. Not only will they have a wait staff that will deliver the food to each person in attendance, but they will do so in a professional manner that will not disrupt the overall flow of the event. Furthermore, catering companies will also be aware and conducive to those that will be eating but have certain diet restrictions. For example, many catering companies will offer vegetarian, vegan, gluten free and other options for all of your guests.

Overall, a catering company can save you a lot of headaches during the planning for your corporate event. You want to ensure that everyone in attendance is happy, but you also don’t want to dedicate time to cooking or preparing meals on your own. Hiring a catering company to do all of the hard work for you can save you time and stress and help make a great corporate event.
Mmmmm, nothing beats haystack cookies. These have got to be the absolute best kind of no bake cookies. I remember sitting on my grandma's counter while she would make them. Talk about comfort food.

This is the recipe that I use now.

2 cups of sugar

1/2 cup of milk

1/2 cup butter

2/3 cup cocoa

1/4 teaspoon salt

1 teaspoon vanilla

3 cups rolled oats

1 1/4 cup coconut

Making them is real simple. Before you start though make sure you have some wax paper or parchment paper to lay the cookies out on. They mixture cools quickly so you have to work quickly.

In a large saucepan add the sugar and other wet ingredients and stir frequently and bring to a boil. Reduce heat to medium and boil for 2 minutes. Turn off the heat and stir in rolled oats and coconut, mix until all the rolled oats and coconut are covered with the chocolate mixture.

Now working quickly, spoon piles onto the wax or parchment paper dipping the spoons in water to prevent sticking.

Allow to cook for about an hour and enjoy. Store in an airtight container.

I recommend that you double this recipe when you make them. Around our house these haystack cookies disappear by the handful.

1-1/2 cups Aunt Jemima Pancake Mix

1/4 cup rolled oats

1/4 cup fine corn meal

1/4 cup poppy seeds

1/4 cup oat bran

1 egg

1/4 cup vegetable oil

milk

1. Grate potato with fine grater. Do not drain juice.
2. Add remaining dry ingredients
3. Add egg and oil, stir until mixed.
4. Add milk and mix. Use only enough milk to
get desired consistency. The thinner the batter the thinner and lighter
the pancakes.
5. Cook in cast iron pan. Flip cakes over when
underside reaches a golden brown. Add more oil to pan between cakes to
prevent sticking.
These pancakes go great with any syrup but real
maple syrup is the best. Recipe makes enough for 2 people, about 6 or 8
5" cakes.

For a greater cup of coffee you simply cannot beat a fresh cup. In fact that is how I make coffee all the time, by the cup. It doesn't get any fresher then that.

Most department stores sell a #2 cone filter holder that is ideal for 1 cup of coffee.

Use fresh ground beans only. Pre ground department store coffee blends are bitter and inferior. Add 2.5 tsp of fresh grounds to the filter. Boil fresh water and add to the beans. Add cream and sugar to taste. Coffee cream or whole cream offer the best flavor.

Enjoy.

It is Sunday, a great day for cooking a roast in the slow cooker.

I
start with a 3 or 4 pound beef roast. I stud the roast with 3 or 4
cloves of garlic. Cut the cloves in half length wise and insert into the
roast by using a knife to make a insertion.

Next place the roast
into the slow cooker and sprinkle with salt and pepper. Add some dry
garlic flakes, 1/2 cup of water and 2 table spoons of beef bouillon.

I want this roast to cook all day so I set the slow cooker to low and cover. In about 6 or 7 hours dinner is ready.

I just remembered a little trick my
dad showed me. It is a great way to store bacon without having to have
it thawed in the fridge.

When you bring a new package of bacon
home lay the strips on a cooking sheet and freeze them. After they are
froze simply bag them and use the individual pieces in whatever dish you
choose.

No more wasted bacon that has gone bad in the fridge.

Whenever I fry meat in the frying pan I never waste the yummy drippings that collect in the pan. This is the base for a great sauce for whatever meat you are cooking.

Once the meat is cooked remove it from the pan and add about a half a cup of beef or chicken stock, depending on the meat. Stir around with a whisk to remove all the good stuff on the bottom of the pan. Add about a half a cup of milk to the pan and stir. Then take a quarter cup of water with a table spoon of corn starch and mix. Slowly add the water to the pan stiring constantly. Only add enough water to get the desired consistency.

Slice the meat into strips and pour the sauce over. Enjoy.

Now off to cook dinner. ;)
