Mmmmm, nothing beats haystack cookies. These have got to be the absolute best kind of no bake cookies. I remember sitting on my grandma's counter while she would make them. Talk about comfort food.
This is the recipe that I use now.
Making them is real simple. Before you start though make sure you have some wax paper or parchment paper to lay the cookies out on. They mixture cools quickly so you have to work quickly.
In a large saucepan add the sugar and other wet ingredients and stir frequently and bring to a boil. Reduce heat to medium and boil for 2 minutes. Turn off the heat and stir in rolled oats and coconut, mix until all the rolled oats and coconut are covered with the chocolate mixture.
Now working quickly, spoon piles onto the wax or parchment paper dipping the spoons in water to prevent sticking.
Allow to cook for about an hour and enjoy. Store in an airtight container.
I recommend that you double this recipe when you make them. Around our house these haystack cookies disappear by the handful.
