Deluxe Pancake Recipe

Light and fluffy yet loaded with extra good stuff. You will wonder how you ever ate regular pancake mix

  • 1 small / medium potato (finely grated)
  • 1-1/2 cups Aunt Jemima Pancake Mix
  • 1/4 cup rolled oats
  • 1/4 cup fine corn meal
  • 1/4 cup poppy seeds
  • 1/4 cup oat bran
  • 1 egg
  • 1/4 cup vegetable oil
  • milk
1. Grate potato with fine grater. Do not drain juice.
2. Add remaining dry ingredients
3. Add egg and oil, stir until mixed.
4. Add milk and mix. Use only enough milk to get desired consistency. The thinner the batter the thinner and lighter the pancakes.
5. Cook in cast iron pan. Flip cakes over when underside reaches a golden brown. Add more oil to pan between cakes to prevent sticking.
These pancakes go great with any syrup but real maple syrup is the best. Recipe makes enough for 2 people, about 6 or 8 5" cakes.
